That title sounds kinda yuck, eh? Hehe. But seriously, I feel like everytime I make a raw cake, it's just...wet. I made Alissa's carrot cake yesterday, and the flavors work well, but it's soggy from having soaked the raisins and dates. Are all raw cakes like this, or am I doing something wrong? I miss the thicker texture of traditional cakes, and I'm tired of soggy food. :(

I dislike most raw cakes for this reason too. My husband made this cake for me for my birthday, and it was very good: http://therawchef.com/therawchefblog/carrot-orange-cake It was dehydrated. And the icing was to die for!

you can always just adjust the amount of water you use, and maybe increase the number of dates, since they cause the ingredients to stick together without being "wet" I made a birthday cake using this recipe and it was quite good, possibly too crumbly, but I could've added some more raw honey (my uncle makes his own) or dates.

Medjool dates are also stickier than other dates, and I find they don't need to be soaked.

The frosting is definitely a prize winner. If you want to make it even better, substitute almond milk in place of the water. Lucky you to have such a sweetheart. :)
I'm saving up pulp from almond milk to make a more traditional type of cake from one of the recipes in "Cafe Gratitude Sweet World of Raw Desserts". These recipes call for 8-9 cups of "nut flour" to make a full size two layer cake. I got to try a small piece of this type of cake that was brought to a potluck by a local raw chef. It was so crazy good I've been craving it ever since.

soak then dry your nuts first. instead of soaking the dates throw them in the dehydrator for a few minutes to get soft. also you can add finely shredded coconut to your mix if it's still too soggy. ( znaturalfoods.com has the best shredded coconut!) I can get a better cake like consistency if I do these things. And if you have a really good food processor it will whip it up and get it kinda airy too. But yeah..it's still gonna be more doughy.
But for us..since we haven't had cake in years..it's just as good as the real thing. I made a cake for my son's b-day and served it with a regular cake. Everyone wanted to try our cake. I guess I should have made a bigger one. People really liked the flavor. And it was just a basic dates, nuts and carob powder type of recipe. The simpler the better for us. And to make sure I can make these things quick..I pick a time to soak and then dry a bunch of nuts so I don't have to do it each time I need dry nuts for a recipe.
