View Full Version : Strawberry Chia Milk

Do you remember the strawberry milk we used to drink when we were kids? This is the grown up version, healthier, fresher, and even more delicious. The recipe calls for frozen fruits, so that the liquid does not heat up during the relatively lengthy blending time.

Ingredients (serves 2)
- 2 T chia seeds
- 2 cups water
- 3 T agave nectar or raw honey
- 2 cups frozen strawberries
- 1/2 t lucuma powder (optional)

Directions
- Blend everything in a powerful blender for at least 2 minutes.

I have been making strawberry shakes with 1/4 - 1/3 cup of cashews as the "milk" part and 4 cups of frozen whole strawberries. I wondered if I should use less strawberries. I have actually put chia into it sometimes too, but never without the cashews. It's very rich.

I am sure going to try this as soon as I replenish my supply of strawberries! I am so hoping this pleases my husband as well as the cashew version, since I for one could use fewer calories.

I also make one using frozen mango cubes, and will try it without the cashews now that I have been given the idea here.

Do you have to soak the chia seeds first?

Soaking the chia will help if you don't have one of the super powered blenders, but I don't find it necessary with the KTec (BlendTec). Won't be necessary with the Vitamix either.

OMG. This is SUPERB.

It sounds so simple, and it is. My husband LOVES it too. The texture is to die for.

Some tips:

1. Use frozen strawberries, not fresh ones. (Cold is good.)
2. Do not attempt this unless you have a high-speed blender. Chia seeds can be hard to blend otherwise. My Vitamix worked perfectly.

Try it. You'll love it! And it does remind me of that smooth, milky strawberry milk we had as kids. Nice recipe.
