I have been wanting to try those Nori sheets, especially the wrap with the apple in it that is in Alissa's book. So I was looking at the health food store yesterday and found a package of Nori sheets but they looked dried. Is that how they normally come? I was expecting to find them in the refrigerated section of the store but found them in a packaged section. Never having these before, I guess I need a little help. The package said to heat them in a hot pan, but obviously I shouldn't do that right? Would soaking be better to make them more pliable and wrappable? Any advice would be most welcome and appreciated!

I bought a bamboo sushi mat at my local Asian market and it was just over $1.00. That's what I use when I roll - I'm still getting the hang of rolling them up using it.
Yes, they are dried and no - you do not soak them. You can even take a sheet and rip it into pieces and add it to your salads if you'd like. I'm still acquiring a taste (ahem) for sea veggies, so I try to incorporate them where I can if they have a mild taste. No, you do not need to heat them in a hot pan.
Now - I made his recipe and I didn't care for the laver spread, so I can't recommend that - but the rest of it was really tasty! I dipped it in tamari (really salty, so easy does it).
He tells about nori and shows how to roll it up - although he admits you have to just get the hang of it. I've made them about 4 times and I'm still getting the hang of it, but getting better! *Ü*

The wetness of the filling is what makes them rehydrate. I've never made all raw sushi before..but I'm pretty sure you'll need a layer of something similar to the moisture level of the sticky rice in sushi--like avacado, or parsnip rice, shredded carrot or cucmber etc.
cover all of the square except the first inch or so..then when you roll it up, that inch will adhere to the back of the roll with a thin brush of water. You can even use your fingers to dampen it so that it will stick.

Thank you Deb and Thick! I will look at the video. I just found myself a little confused, as I saw those dry things and wondered how I could possibly roll them up without cracking or tearing them.

You dont have to use a bamboo roller. I use a kitchen towel...even though I do have a bamboo roller=)

So true - you don't need a mat! They were so inexpensive and I saw them using it on the second video I linked to that I bought it. But I think their's was bigger than the one I got. (Plus, I like all gadgets - ha!)
If you want to - do give the grated jicama a try. I was hesitant to try it as I always used grated cauliflower - but I'm glad I tried it, I really liked it. (But, now here I sit with half a jicama...) *Ü*

Oh that sounds good! Can you believe that I never had jicama before until I tried the one in Alissa's book? I now love jicama. lol
