Stopping by to share a great recipe with you. I made it up so I am bragging when I say it is the best...but it is the best *I* have personally had!:p
I came up with this by modifying the Rich Cheddar Sauce ino a soup, and it is so delicious I can't stop eating it. YUM.
Cheesey Tomato Soup
Makes about 6 cups (I think!)
1 cup nuts (almonds, cashews or sunflower seeds) soaked
1 cup water
1 red pepper, seeds removed
2 small or one big stalk celery with leaves
2 tablespoons miso
1/4 cup onion
1 large clove garlic
2 tablespoons raw tahini
1/4 cup nutritional yeast
Blend all the above ingredients in a high speed blender or food processor till smooth and warmed to less than 115 degrees.
Chop up 2 Roma tomatoes (or the equivalent amount of another kind of tomato) and add to the soup. Serve warm or cold. I also think this would be good with corn, some cauliflower or broccoli that has been softened in the dehydrator, or any other veggie.
