cheesecake recipe. I need one if anyone has it. I've search quite a bit but can't find one without tofu. I thought of using macs but wanted to check b4 buying them. I'm allergic to cashews and DD's b'day is Monday. she wants a cheesecake. I want to do a raw one!! thanks.

I got this recipe from pure2raw.com. If you go to the site and then to the recipes tab and then to raw deserts tab, find the chocolate cream cake recipe and there are photos included. Trust me this will be the best cake ever. I make one a week. Everyone that has tasted this cannot believe it's raw. Hope you like it :)
Raw Cheesecakes or as we call it Cream Cakes
This recipe might sound daunting, but it is so easy and delicious.
Ingredients:
Crust
1 cup pecans, unsoaked
1/3 cup, medjool dates (pitted), roughly chopped
1 cups coconut flakes
1/2 tsp sea salt
1 tsp vanilla
Directions:
Place all ingredients into food processor.
Press into bottom of pan. We used a 8in spring board pan.
First line bottom of pan with parchment or wax paper
Filling
1 1/2 cup cashew butter I use almond butter
1/2 cup coconut oil (melted)
1/2 cup agave
1/2 cup water
pinch sea salt (optional)
1 tbsp vanilla
3/4 cup cacao powder (raw chocolate powder)
Directions:
Place cashew butter, agave, water, sea salt and vanilla to blender. Blend till smooth. (this does work the blender, be sure to use the tamper as to not get the mix too hot, the first time I made it I'm sure I overcooked it)
Add in the coconut oil and blend.
Then end with cacao powder.
Blend till combined
Pour into pan on top of crust, we sprinkled some cacao nibs (optional), you may use chocolate chips if you want.
Then place in freezer…that is it. No baking required. : )
Pull from freezer and let come to room temperature for about 20-30 minutes
Slice and enjoy : )
Keep remaining slices, if any, in the freezer!!

Hi Margoss,
I have occasionally used macadamias in place of cashews in some recipes (though not in a cheesecake) - the issue is that they are more oily - just something to keep in mind.
Please post photos once you make the cake, and happy BD to your DD!
