View Full Version : What to do with Lucuma?

I ordered some Lucuma but now I have no clue why. I thought I saw a yummy looking recipe that included it and someone said it tasted like shortbread, but now I can't find it. Help!

Shortbread sounds interesting.

I use lucuma in drinks. My favorite is nut milk or coconut milk, cashews, sweetener of choice, lucuma, and vanilla, cacao optional. Blend until smooth.

Ani Phyo makes a simple ice cream with it. 1/4 cup lucuma, 1/2 cup cashews, 1 1/2 t. vanilla powder, 2 T. yacon syrup, and 1/2 cup water. Blend until smooth. Put in freezer. It doesn't freeze completely solid, stays creamy. You could sub a different type of vanilla and sweetener. Lucuma is the No.1 ice cream flavor in Peru. Tastes like caramel. :)

I'll be checking in later to see if that shortbread recipe gets posted. :)

I've seen some raw candy bars use lucuma to make a caramel flavor.

There's a "Tootsie Rawls" recipe on this site that uses lucuma.

I would first taste lucuma powder plain. What does it taste like to you? To me it tastes like malt. I use it in a lot of desserts, but it depends on what it tastes like to you. Maca is an ingredient that goes well with lucuma. Maca tastes like peanut butter to me.

I use it in the base of a pie. Sunflower seeds, lucuma and dates.

I found this a while back here on RFT:

Carawmella Bars

Nut layers:

3 cups walnuts
1 cup pitted medjool dates
1 T. vanilla
good pinch celtic sea salt

Caramel layer:

_ cup maca powder
1/8 cup mesquite powder
1/8 cup lucuma
1 cup agave or honey
2 heaping T. almond butter
1 tsp. vanilla
pinch celtic sea salt

Chocolate/Nut Butter layer:

1 cup raw cacao powder
_ cup mesquite powder
_ cup almond butter
_ cup agave or honey (I used a mix of both)
2 T. fo-ti
1 tsp. vanilla
pinch celtic sea salt

Process all nut crust ingredients in food processor till mixed well, nuts a medium chop.
Press half the mixture firmly into a square baking dish (8x8). Set the other half aside.
In a bowl mix all ingredients for the caramel layer till very smooth, add a touch more honey or agave if needed to make a thick but smooth mixture.
Spread over nut layer and put in freezer till very firm, about 40 minutes.
In food processor blend all ingredients for the chocolate layer till mixed and fudgy.
This will be very thick, don’t overwork your processor.
Take it out of the processor bowl and work it with your hands for a second. The consistency is like a fondant dough. Place it over the caramel layer and press to cover.
Sprinkle the rest of the nut mixture over the chocolate, pressing in into the chocolate layer firmly. This will pretty much fill the pan to the top.
Place in freezer for several hours to firm up. Remove and slice as desired.
This makes a huge batch of candy and should be stored in the freezer.

I use it as a sweetner in some of my raw food recipes. It is wonderful in smoothies. It goes wonderful in ice cream recipes. I love Lucuma Powder. There are recipes on many raw food sites using lucuma powder.:)

Revdrcyn...how much Maca, can I leave the mesquite out? I do not like that taste. What is fo-ti?

I have only made it without mesquite because I have not been able to find it - anyway, it tastes great!

Sorry I did not notice the amounts in fractions did not print correctly - will try to find the original post on RFT

I think it calls for 1/8 cup of maca
