Hey, I just dehydrated a bunch of eggplants and it turned out tasting bitter. :(

So my eggplants need help from you all!! :)

I would really appreciate any ideas and tips how to really spice up eggplants!

I always see them at the market and they always seem very appealing to eat!!! :D

The ever-popular eggplant bacon I intend to try to make eventually, once I get some of that vinegar:

Some of the bitterness can be removed (before dehydrating) by sprinkling the eggplant slices with salt and laying out on paper towels for an hour.

I tried the egg bacon recipes several months ago and found it too greasy too eat. Really thought it would have been good if less oil was used though...

The salt and leaving them beforehand sounds like a good idea.

Yeah, I read about how someone made sandwiches out of these. It really motivated me to buy some and started dehydrating them. It would be nice to get some of the bitterness out.

I'm hoping for some more good ideas as far as eggplants goes. I find them really interesting since I never really had them. So I would like to get creative with them. And would like to start with tried recipes by others that says, "Viola!!"
