SheLovesToEat posted that she froze a sweet potato and thawed it and it was just like she had baked it - I tried it and it was awful! I'm not sure what went wrong - it was rubbery and I couldn't even stick a fork into it. I am so disappointed. Could it possibly be that the sp that I had was still "green"?

Mmmmm... (un)baked sweet potato. I am sorry to say I have absolutely no advice to offer on this, except for the fact that I've heard soaking sliced SPs overnight reduces the starchiness, but I don't think that fits your case. :rolleyes: I hope somebody knows, though, because I want to try making this too! :p Hehe.

I rememeber reading that post. Do you remember how long she said it was frozen, before being thawed?

I have never heard of the freezing method. I have tried slicing s/p really thin and soaking it to remove the starchiness and it still tasted pretty gross. If someone figures ut a way to make raw potatoes palatable, let me know!
