I'm hoping someone can help me with some suggestions for coconut substitutions - like when a recipe calls for Thai young coconut meat or water. I do not like the taste or smell of coconut, but I'm at a loss as to how to replace it since I don't know what the final product should be like.

Well it depends on the recipe, but I have used soaked cashews (overnight) and enough water to make a similar consistency to coconut meat. I have substituted water that I used to soak dates for coconut water when I didn't have it, but it was for a sweet dessert. You could just sub water or almond milk too. It depends on the recipe what would work best.

Thank you - those are helpful suggestions. One recipe that comes to mind where young coconuts are used that I'd love to try is in tortillas. Would soaked nuts work? I know they would taste different, but I want the tortilla to "work".
Also, do you know of another nut/food to use instead of cashews, though? I'm allergic to them. (I know, a great loss to not be able to use when eating raw!)

Instead of cashews, macadamias, soaked almonds or sunflower seeds.

Do you know proportions - like how much coconut meat equals how many nuts? I have no clue...
