View Full Version : what to sub for cashews in GW's tomato bisque?

Came across Green Woman's delicious-sounding tomato soup recipe last night and am itching to make it for lunch today. The recipe is as follows:

Tomato Bisque Soup

2-3 Roma Tomatoes (or 1-2 Beefsteak Tomatoes)
1/2 c. Water
1/3 c. Raw Cashews
1 T. Bragg's Liq Aminos
1 t. dried Rosemary
1/2 t. Sea Salt


HOWEVER, I don't have cashews in the house. I do have a variety of other nuts: macademia, sunflower seeds, pumpkin seeds, brazil nuts, walnuts and almonds.

I'm thinking macademia nuts... but before I launch off into making this, I wanted to see if other's thought this would work. I don't want to make something that turns out unappealing and wasteful.

Most use macademia as a cashew substitute. Or you can try 1/2 those, 1/2 sunflower seeds. For those with no nuts or seeds, you can use sundried tomatoes for a delicious tomato soup.

I always use almonds because I am allergic to cashews. I have never been disappointed.

Thank you both for your suggestions! I subbed in Macademias. (And added a few sundried tomatoes, dried basil, and paprika for color.)

Delicious!!! :D

(even though I think I may have over-heated it in the VitaMix... there was steam coming off and it was quite warm, but not boiling.)
