I've been having a difficult time getting myself to eat salad just because of the fact I don't know any good (easy/simple) recipes to accompany my greens. Hence, I was motivated to create this thread. Here is a winner I discovered yesterday:

Kreamy Curry Dressing (from Ani's Raw Food Kitchen):
1 tbs curry powder
1 apple, cored and diced
1 clove garlic
1 tbs grated ginger (I just used a chunk that seemed like enough :p)
1 cup EVOO
juice of 1 lemon (about 2 tbs)
1/2 tsp sea salt
Directions: Blend until smooth. :)

The greens I ate it on were purple cabbage, romaine, dill, and cilantro and then topped with cauliflower, red bell pepper, avocado chunks, and flax seeds. Yummy in my tummy! :D

I like to eat picnic style salads. First I put a small amount of baby spinach into my mouth and I follow that with a cherry tomato, grape tomato, or a small slice of tomato. All thats left to do now is chew. :)

Anything with fresh-pressed o.j. as the base. that way I get to use more dressing minus the guilt of high fat!

Thanks for all the feedback! :) I like using sweet things like fruit juice as a base, but juices alone aren't thick enough to stay on the greens and not conglomerate at the bottom of the bowl... anyone use anything specific to give it a higher viscosity? I think avocados could work, but then it probably won't keep in the fridge long enough. Or maybe apples, with a squeeze of lemon to help preservation.

I now have vinegars on my shopping list, too. :p

I usually make a simple vinaigrette dressing, but sometimes I like to do something different. This is a cilantro based dressing that is bright green and delicious! It is also very light and fresh tasting with little oil and no nuts!

2 small cloves of garlic, minced
2 tsp minced ginger
1/4 cup apple cider vinegar
1 cup cilantro, chopped
1/4 cup water
2 tbsp olive oil
2 tbsp agave or honey

Blend all ingredients except oil, add oil in steady stream while blender is running
This makes enough for 3-4 salads :D

Note: Taste as you go so you can modify it to your taste. I sometimes use a different herb if I want something different!
