Oh I have been there! Pondering the jars of pickled peppers that I love so. I would have to say no, they are not raw. But make your own! Save a small glass jar, or a small mason jar. ( I use a pint jar.) You may want to sterilize the jar, but I don't, they don't last long:).
Slice the jalapenos into desired thickness seeds and all, no stems. Stuff peppers into jar with a garlic clove or two, a slice of onion and fill jar with a mixture of vinegar to water 1:1, enough to cover. I finish the jar with a few cranks of fresh ground pepper & salt and a pinch of turmeric. You could add other spices as well, or jazz it up with carrot slices, cauliflower florets...
Twist lid on tightly, give it a shake and store in fridge. In about a week they will begin to get paler in color and soften, looking like the real thing. They are sooo good and actually taste better because the slices are firmer and taste fresher.
unfortunately, I don't believe they are. If they were raw, they would be kept in the refrigerated section of the supermarket... and would be labelled as such.
mmm, now I'm craving raw pickles...

I wonder if you could do them like pickles or cabbage (saurekraut) in brine?
I don't see why not...then they would ferment and be with the living! :D hehe

ETA: think of them as fermented...(not pickled) among the living!!
