Either grate then or run them through a juicer and use the pulp to make carrot cake!

I purchase 5-pound carrots regularly. I blend them together with jicama and sunflower seeds and flaxseeds plus water and condiments in my vitmix and then dehydrate the smoothie (dotted with seseme seeds) to make chips.

flax crackers with carrot pulp and lots of spices...loads of carrot cake...carrot/apple juice with ginger is amazing..carrot pate....carrot salad with raisins and fresh pineapple chunks..I would have a blast!!! :)

Good Idea's!! Geez I never even thought to do carrot cake..I just stumbled across a Banana Nut Loaf that I have pretty much all of the ingredients for. Lotsa carrot pulp in there. WOO HOO!!:D

No Horses around here...:)

This is a Raw Banana Nut Bread recipe made with juice pulp by Matt Monarch that Angela Stokes had on her blog and her current newsletter.

Banana-Nut Bread

2 cups vegetable juice pulp (preferably at least half of it carrot pulp)

8 tbsp ground flax or chia

3/4 cup chopped walnuts

3/4 cup raisins

5 bananas

Mix together the veggie juice pulp and bananas in a food processor. Add in the ground flax or chia and let the food procesor run until the sees are completely mixed in. Transfer the mixture in a bowl with the walnuts and raisins and mix them in thoroughly by hand. Shape into into a loaf. For major yumminess, top with “Cream Cheese” (see below)

Cream Cheese

Flesh of 3 avocados

9 dates

Juice of 1 or 2 lemons

big handful of dulse

Blend the ingredients in a blender. Serve on top of banana nut bread, or just eat on its own.

Angela also mentions that she replaced the walnuts and raisins with chopped brazil nuts and diced prunes and added lucuma for shortbready yumminess.
It just looked very basic. I need very basic. lol :D

We're in the same club, pal. ;) I gotta make this sometime! I bet it tastes like wonders with a blueberry spread on top. Do you have any idea how thick the loaf should be, though?

A last resort choice or carrot pulp is to make a treat for the pets, or mix it into their food. My pups love the leftovers of whatever green smoothie I couldn't quite finish on my own. :o

Juice of carrot, apple, lemon, and ginger.

Carrot Pate: 2 cups carrot pulp, 1 cup pine nuts, 1 cup water, 2 Tablespoons almond butter, 2 Tablespoons white miso, 3 cloves garlic, 1 teaspoon thyme, 1/2 teaspoon cumin, 1/8 teaspoon cayenne.

Experiment with it to make crackers or burgers.
Crackers: add ground flax and carrot juice, dehydrate 12-24 hours.
Burgers: add chopped mushrooms, shape into patties, dehydrate for a few hours.

Carrot Sauce: 1 cup carrot juice, 4 Tablespoons almond butter, 1/2 avocado (opt), 1 Tablespoon wheat-free tamari and 1 Tablespoon water, 1 teaspoon garlic powder, 1 teaspoon honey. Blend until smooth.
Serve on romaine veggie boats, or walnut/zuchinni pate wrapped in soft lettuce leaves. Or, add more carrot juice and call it soup.

Carrot waldorf: Grated carrots, chopped apples, raisins, and walnuts. Optional: chopped kale, cabbage, seaweed (dulse or wakame - soaked in lemon water, rinsed and drained), raisins, sunflower seeds, red pepper. Dressing of ground sesame seeds or tahini and/or almond butter, blended with olive and/or sesame oil, lemon juice, ACV, and honey. Make a big batch. It will keep for at least 2 days.

No, never baked even in the SAD. I am sure a few experiments will suffice!! :D

Hey Raw.N, I got your message today, but I was not able to access your visitor message or contact page. :confused: Do you have it set up that way intentionally? Anyway, I'll answer here and hope you see it. :)

Did you use flax or chia? Did you grind the seeds well? I would line a bread pan with plastic wrap and press the batter into the pan, then put it in the fridge to set up. After giving it at least a couple hours to set, invert it (carefully) onto a plate and frost it.

Don't expect it to be too much like bread. :p It does sound like it might be good. I had a piece of Carrot Cake at a pot luck. It was likely the same sort of recipe, without the bananas.

If it really doesn't work I would try adding more ground flax and carrot juice and make crackers. :)

Hello RawKnitster, I am not sure, I must've changed it, & didn't realize, I will check my UserControlPanel today! Thanks.

I used flax, & grinded them into a powder first. Oh that may have helped setting it up in the fridge first...good idea.

Yea it was more so a gooey mess, which I didn't want to go to waste, so I stuck it in a Zip Loc Baggie & put it in the freezer...to figure out something with later...:o

I'd like to try it maybe again sometime when I have a Dehydrator. I do not now.
