Ume is a very longstanding japanese traditional food.

The vinegar is made with plums and salt. Its a very healing food and chases fatigue. Apparently the samerai would take some ume plums after battle to recuperate.

It is known as the king of alkaline foods.

I take a tablespoon of the vinegar dissolved in a glass of water. The ume plums are a bit too tart for me so I take the vinegar instead.
Good for variety of taste in salads.

I keep a bottle in the pantry to dress up an occasional salad or veggie dish. It adds a nice dimension of flavor.

I dunno. All I can tell u is they harvest ume fruit when they ripen in June and pack them in barrels with sea salt. The juice is sold as vinegar. As far as I know there is no heat involved in the process of making the vinegar.

Well apparently its good for a wide variety of ailments. If you google "umeboshi" or "ume" you will find articles about this alkaline wonder and some of the well known benefits.

As for weight loss, its known as a metabolic balancer and a functional and balanced metabolism is key to attaining a healthy weight level.

Its been mentioned that its a "feel-good" food. I know in Japan a ume plum is often consumed with the morning (green) tea. Too tart for me in the morning. Healthy though.
