we had a potluck at lunch today with an international theme ( at my office) i made raw kale salad, and many compliments were given!! this was a totally cooked affair, so i was pleased! here is the recipe, i wanted to follow nomi shannon's, but ended up doing my own thing:
dressing:
seasame oil
bragg's
lemon
sea salt
grated ginger
salad:
chopped kale - dino and regular
grated carrots
lentil sprouts
chopped red pepper
raisins
slice the kale, and let marinate in the dressing, then add the other veggies! it was totally yum, but a bit too salty - i suppose braggs and salt is a bit much, just make sure it's not to salty - anyway it was good. the raisins add a nice sweet touch and soak up the dressing too. this'll last a while in the fridge, how convenient!
ps i allowed myself a bit of cooked since it was a party, but i did notice feeling a bit sad after, and also craving MORE cooked this afternoon...surprise surprise.
