Has anyone made this? Did you like it?
That used to be one of my favorite Olive Garden dishes.
But looking back at it now, ugh all that fried stuff on it!

I did and I was very happy with it. My mistake though was not peeling it first. Oops. I hadn't made any raw dishes with eggplant before and I wasn't sure if the rind would soften in the dehydrator. It didn't. Next time I make it - and I will because it is really good - I'll peel it first. This weekend I'm going to attempt the eggplant bacon recipe I saw in this forum. I'm assuming I have to peel the eggplant. :D

Yes, for the eggplant bacon, you do have to peel it as well.
Man, I've got to stop trying all the recipes. I'm going to go broke trying so many of them.
I've got to get a routine down where I make only new recipes every so often!
But, the eggplant parmesan I've just got to try!
