I am just now back to raw...after a fairly long hiatus into cooked vegan (about 14 months) and since I've been gone, this new "raw phenomenon" has appeared!

I made marinara last night with kelp noodles, and after sitting overnight, they are amazing-just like cooked pasta. Wow!!

Just had to share my amazement. Lots of recipe ideas to come, no doubt!

I've been reading about them and almost bought some today at my local co-op, but didn't...don't know why. You're making me wish I had. :o:p

They are WONDERFUL. I just recently bought a whole case of them from Sea Tangle.

I have yet to find these anywhere :( . Do they keep them with the noodles or the sea weed?

I found them at a local health food store by the other sea vegetables. I think buying a case directly from manufacturer would be a great idea. Plus there seems to be at least 3-4 servings in one package, so they could last. I paid about $3.75 for one, I think. Pretty darn affordable in the world of raw gizmos and whatnot.

Yes, if you soak them correctly they get soft just like pasta. I've found the trick to be soaking them in a bowl of water with about a tsp. of sea salt and the juice of 1/2 of a lemon. I usually let them soak for anywhere from 15 - 30 min. and they're perfect.

Thanks for posting about them. I've been wondering about them and almost bought them online a few times. Are they like regular noodles or more like those clear rice noodles? I really do miss spaghetti...

Oh! I was sooo tempted to purchase these online just a few nights ago, but was uncertain because I have never had them. I worried if they would be salty or taste funny. Now I think I will order some from the site and given them a try.

I LOVE kelp noodles. I will literally just eat them by themselves sometimes... they're crunchy and salty and yummmmmmm...
