NEW AND IMPROVED Karens RAW VEGAN ICE CREAM
Ingredients:
1 cup raw cashews, soaked at least 1 hour then drain
meat of 4 young coconuts
2 cups coconut water
3/4 cup dark agave nectar
3 tbsp coconut oil
3 tsp vanilla extract
1/4 tsp sea salt
Directions:
1. Blend all ingredients until smooth. Add more coconut water if needed to keep the mixture moving.
2. Pour into an airtight container and freeze until solid.
3. Take out and put in blender with little coconut milk to get moving. Blend until like thick pudding
4. Before serving, sprinkle with candied walnut or pecans .
5. To candy walnuts or pecans, mix a little agave and maple syrup and coat nuts. Put in dehydrator for 10 hrs. First 4 hrs @135 degrees, then lower to 115 degrees
