i wanted to pass this along because i discovered it by accident.
maybe most of you already know it but.... it was a revelation to me.

i had to go out of town for a few months and as i was getting ready to leave i noticed i had a few sweet potatos in my fridge. without thinking..... i popped them into the freezer and left.

now i am back 2 months later..... and i forgot i had them in the freezer till i stumbled on them yesterday.

i took one out to defrost overnight and in the morning i was shocked at what i found.
it was soft as if it had been baked in the oven.

i cut it open and mashed it up in a warmed bowl over some hot water ... then put some maple syrup on it and seasonings and it was WONDERFUL ! especially good warmed.

from now on i am going to be freezing my sweet taters....and anything else that might soften as nicely. LOL

just thought i would pass this along.

Dang, wish I had thought of this/known this. I just let two sweet potatoes that were given to me by a co-worker go bad in my fridge. :o

YEAH! when i think of all the sweet taters i have had go bad on me .... and i could have just put them in the freezer. LOL

this was just an accident but wow ! its amazing what the freezing does to it. LOL

if you are going to make pasta out of them.... then you wouldnt want to freeze it before you made the spagetti. but THEN.... maybe it would soften the strands well if you froze them and then thawed them out.

something else to try. LOL
anyway..... i am going to try other root veg like parsnips and turnips.
maybe if you wanted to 'rice' the parsnips and then try freezing it.... that might also make a soft rice.

who knows? i am just thinking out loud here.

ok well..... i hope it works for you.

i am certainly going to be experimenting in the next few weeks.

Nice! This could make it much easier to do a raw sweet potato bread! I wonder if carrots do the same thing? You've got us all thinking now! Thank you for sharing this!

Ooooh good to know. I have two big ones downstairs that I was wondering what on earth I was going to do with.

But are raw sweet potatoes starchy like raw white potatoes??

I like the idea of soft noodles...hmmmmmm interessstinggggg :D

no.... raw sweet potatoes are different. i havent tried freezing any white potatoes yet.

i have no idea if the freezing would soften the noodles..... but it might.
i would think so but you dont know till you try.

just make sure that when you freeze them that they are solid as a rock before you go to thaw them out.

i thawed my rock solid sweet potatoe overnight on a plate on the kitchen counter.
all i know is that when i woke up it was as soft as if it had been cooked.
