I would love it if people would post any nut-free recipes they have that you would normally find full of nuts.
I spend hours and hours at the computer searching for good recipes, and 90% of them involve nuts (yes, cashews, I'm looking at you)... I'm practically ready to write my own nut-free recipe site so people will have a resource. :)
Anyhow, any contributions would be ecstatically appreciated (translation - please please please)!

I like to look for nut-free recipes too. The prices and the complications (whether it's raw or not) of nuts keep me at bay. :(

I am definitely keeping my eye on this thread Evie. I love nuts, but I think this is a really good idea...especially for nut heavy desserts.

These sound yummy, especially the veggie patty. I think I'm going to use Tamari instead of the Nama Shoyu. We'll see how it goes!

Yeh, I agree, that veggie patty looks good and son-of-a-gun, I even have some carrot pulp in the fridge I hadn't yet decided what to do with!!!

i probably posted this in a thread before, but it's worth posting again... I found that the perfect replacement for cashews (especially soaked cashews) is a ratio of about 2/3 thai coconut meat and about 1/3 hemp seeds. and if you're making something like "pumpkin" pie, add a dash of psyllium to help it firm up (although "pumpkin" pudding is fantastic on it's own!) For crusts use dried coconut ground fine and mixed with dates/spices

This sounds great! I think one could use Irish moss as a thickener as well. This would be great mixed with berries of your choice and wrapped up in the banana crepes!

Apple Cranberry Chia Cookies
2 Apples
1/4 c Raisins
3 Dates
2 TB Agave
2 TB Cinnamon
1 TB Ginger
1/2 t Allspice
3 Cardamom Pods
1 t salt
1 t Vanilla extract or 1" Bean
1/2 Lemon's juice
-Blend smooth, then pulse in:
1/2 c cranberries
Handful raisins (the red kind are really good)
Mix with Chia gel (2 TB Chia + 4 TB water/apple juice/coconut water), about 1/4 c hemp seeds or grated coconut, then stir in enough coconut flour to make a good dough-like consistency (about 1/2 c)
Use ice cream scoop to scoop dough on teflex sheets and flatten into cookie shape. Dehydrate at 105 overnight, flip and remove teflex, dehydrate a few more hours until they're the consistency you like.
Enjoy!
These would probably be really good with blueberries too, but I can't find any for less than $5 a pint right now...

What amount of hemp seeds to one young coconut though. You said 1/3 Is that a cup? Any liquid? Is this to make a similar recipe to cashew cream?

Wow guys, thanks for the replies! I thought this thread was going to get buried with no replies at first... I just bought some irish moss and can't wait to try it too... and the coconut meat/hemp seed combo... I will definitely post any links I find also...

I don't mix it up by itself, I replace the cashews in a recipe with it in a 2/3 to 1/3 ratio (roughly)

I had posted a thread about this some time ago. Looks like we have DD that are close in age. DD is allergic to sesame, so I have been reluctant to introduce nuts.
This is probably for me one of the great stopping points for a lot of recipes...nuts or sesame. We use hemp seed for a lot of things though as she LOVES hemp seed. I just got the Raw Hemp seed cookbook and made a few things out that that were really good and are not nut intense. There are a few dessert recipes that call for nuts or nut butters. I really love the Spinach Thyme soup and that has hemp oil.

Okay so I haven't actually prepared any meals of my own.
I really like the idea of the banana crust. Especially for a Chocolate (carob) Mousse Pie. *but I wanna have a PB choc pie with banana crust..*

I made those veggie patties TWICE now! They were pretty spicy/flavorful the first batch, but were oh so good in sandwiches.... with lettuce buns/tomato and some homemade mayo. Dh didn't like them plain, but I bet he would've liked 'em if they were in the sandwich I made....Unfortunately I ate all of them, so he didn't get to try any.

I'm glad the recipe was of use! :) Next time at the store I'll pick up the ingredients and try them myself. Did the mustard make the patties, umm, mustard-y? It's not really my spice of choice, so do you think there is a different spice blend that might work (or does it need any spice at all)?

That's funny you mentioned about the mustardy flavor! I never use a predominant sour flavor of mustard and lemon like in this one, so I followed the recipe real close the first time. It was a bit spicy, but I figured would be good in a sandwich made of lettuce or some raw/flat bread. But I ate them all before I got a chance! LOL
Then the second batch, I added more carrots, but didn't add any more of the other stuff and they were a tad dry because I left them in the D too long and also because the proportion of olive oil was less. So I made a sort of sweet raw mayo, and some carmelized onions and red peppers. Made about 25 little sandwiches like this held together with a toothpick and brought them to a raw potluck---I think they licked the bowl! Everyone loved 'em. the buns were made of spinach, then tiny dab of mayo, patty, tiny dab of mayo, slice tomato, carmelized onions/ red peppers mix, spinach. DEEEEELISH......
I just winged the mayo as I've made regular non vegan mayo many times. Here's what I did: 1/4 avocado, meat from 1 young coconut, 1/3 c cashews,
Juice of 1 lemon, pinch salt, agave, blend. then after all mixed up, I drizzled in about 3 TBSP of olive oil.....I'm only guessing at all the measurements....
Carmelized onions and red peppers: slice them thin and add some date paste, olive oil and a little salt. Spread out in the D and stir every now and then. Keep in for two or three hrs.
The patties really shrink! Def double the recipe. They'll turn out about 2/3 the size you make them too. The first batch turned brown, but the second batch stayed orange.....I had the second batch hotter/longer so think that's why. I did an experiment and brushed half of the second batch with lemon juice to see if I could prevent them from turning brown, but it made no diff - they all were orange.....

Right with you OnMyJourney, definitely going to make these soon. :D I'll give up my childhood predjudice and try mustard, the main reason I wouldn't eat it before was because of the smell. :o Thanks Mary Kay for sharing your sandwich combination, too! More and more reasons to get the dehydrator purring. ^_~

Not all the time, mind you... but when I want something filling that will feel "light" after I eat it, seeds are way better for me than even soaked nuts.

Which seeds do you find work best for which nuts? I also dislike the feeling I get after my food is too dense. :S

Hi! Yeah, I have heard that before, but I haven't tried it because I'm afraid it will totally change the flavor... seems like people use cashews and almonds a LOT in dessert recipes, for example... what would be a good substitute for a sweet dish vs. a savory dish?
I do love sunflower and hemp seeds, so maybe I just need to take the leap of faith and try a recipe... :)

And drolemil, I hope you don't mind the mustard flavor! Hope you're not mad at me if you don't like'em!!!! Again, my dh didn't care for them.
I may try something like this again, only add some dried tomatoes and an extra date or two, with some pepper to make a more barbeque-y type burger.
I absolutely LOVE my nuts and seeds ---I just eat too many of them and it's showing on my belly!
