Haven't seen the vid but she may be using the scraping tool from UBRaw.
I haven't seen the video - but what works really well to remove the meat from a young Thai coconut is a metal melon baller. Works like a charm!
Now - if the meat is pretty thick, you'll want a quality melon baller otherwise it will bend a cheapy one. I know from experience - ha!
Here's a picture of one (http://www.amazon.com/Oxo-Good-Grips-Melon-Baller/dp/B00004OCM4/ref=sr_1_1?ie=UTF8&s=home-garden&qid=1265410519&sr=8-1). *Ü*

I didn't know that anyone made a scrapper until just now. A couple of years ago I made a scrapper to dig the "meat" out of a young coconut. My scrapper is very simple to make and I'm still using it everytime I open a young coconut and see that the meat has matured out of the soft purplish stage and into the thicker white stage. I took a file and sharpened the sides of a spoon starting the filing on the bottom side edge of the spoon and moving up to the lip of the spoon and repeating the filing until a cutting edge was present on the spoon. Works good :)

The scrapper from UBRaw is REALLY nice. One end is used to scrape the coconut meat out and the other end makes really incredible noodles out of the coconut meat. Go to their website and they have a video showing how they use it. I just got mine not too long ago and love it. I believe their site is UBRaw.com
