View Full Version : Am I doing this wrong?
I tried to make raw ice cream twice this week:
First time I froze bananas then I blended them with a little water and refroze them. It just turned into mulch.
Second time I used cashew nuts, dates, and cacao nibs. It tasted pretty gross, like really bitter chocolate, not nice at all. Also, the cashews and dates wouldn't blend properly, they just collect at the bottom of the blender.
Help please? What am I doing wrong? :(

The bananas do not need water added and should not be re-frozen.
Just put them in the processor on their own as you need the ice cream. Mix and eat. Yummy.

LIke sport said, don't refreeze. Eat immediately. Try stirring in the chopped nuts, and dates by hand. Sprinkle a few cacao nibs on top. Or blend the cacao nibs with some honey, agave, or maple syrup to make a syrup. :)

They do not come out as soft. I think that the other way is more like soft whip and is nicer but I suppose that that (like everything else in life) is a matter of taste.

If you do a youtube search for "banana ice cream+ vitamix" you'll see a video tutorial and you can build from there with different ingredients. But I have to say, unless you have a high speed blender I don't think you can make ice cream with a regular blender...I might be wrong, but I'm fairly certain that my old blender would've never pulled it off.

I use a food processor to make mine. I add a bit of nut mylk to get it going, then some coconut oil after the bananas have been pureed a bit. Then it's ready to be devoured. Soft serve banana ice cream! Yum!

If you use a vitamix, just toss in bananas and a tiny bit of honey, which will prevent the ice cream from freezing hard if re-frozen. Make sure to use the tamper if it is not mixing, or else the blender will struggle. For soft-serve, nothing beats a homogenizing juicer. It even comes out of the machine like soft-serve!

I think that using the juicer you loose a large proportion of the ice cream, unless you are prepared to lick the gears. I would only use it if I was making a large batch. It is nice though.
I use the food processor as I hate waste.
