View Full Version : How long can you keep a dressing for?

I made Alissa's Italian dressing. It is absolutely gorgeous. It is more thick like a pesto - I am very intuitive when following instructions. I've kept it in the fridge for around three days - all ingredients were very fresh, and it has been refrigerated for the whole time. Every time I eat it I get a queasy stomach and worse. How long would you keep a dressing for? I'd think it should be fine after 2 or 3 days, as it's in a base of olive oil. Even Alissa said it tastes better over time. I probably wouldn't use it at the week mark, but it should be fine after a few days shouldn't it?

I kept one for two weeks that said 3 days. You'll know it's bad when it gets sort of a bubbly taste OR, if you keep it in a jar, shake it, open the jar and it spurts. I always just do a lil tongue-tip taste if it lasts longer than a few days in my fridge.

yeah, i really wish the book said how long things were good for. anyway, in annie's thread she's testing everything in the book and she frequently says how long things are good for - here - http://www.rawfoodtalk.com/showthread.php?t=54209

I find that after 4 days it feels a bit "off". Usually 3 days is my limit, so I make small amounts.

I find four days is enough. I've used them up to a week or so later without any bad effects, but the flavor is not as good.

Thanks folks...yeah, it smells perfectly fine after four days...Alissa said it tastes better over time as the flavours meld...maybe my body isn't used to all of the olive oil. :confused: But I won't keep it for too much longer.
