Anyone here ever made/tasted raw curry? Would you be willing to share a recipe for it? Also, what would you eat with it instead of rice? :)

I heard of a couscous made out of cauliflower - pounded in to the tiny pieces. Also you could do some raw bread made from a dehydrator

There are lots of recipes for rice. I don't like the cauliflower one, but I'm hoping I might like the jicama-pine nut one.
I second that curry is great with tomatoes. Also noodles (i.e. kelp, zucchini, carrot, daikon, etc.)
I like mine with young coconut noodles or cucumber noodles, too. But I usually have it with lettuce and tomatoes.
Here are the recipes I use. I don't eat garlic, onion, etc., so these recipes don't include those. Feel free to add them if you like.
Indian Curry + Tomato Curry Sauce recipe (similar to the sauce in Mateer Paneer)
Ingredients:
Tomato Curry Sauce
Tomato (about 3/4 - 1 cup)
Garam Masala
Cumin
Cayenne
*Sesame or Olive Oil
Fresh Cilantro (I recommend using this rather than Coriander powder)
Celtic sea salt
Black Pepper
*I also added a Curry Powder blend, though I'm typically a spice purist. I think it was just more cumin, chile powder, coriander, turmeric, black pepper, etc. Some of these things are not necessary in my opinion, in a raw dish. I would suggest just adding more cumin and chile powder.
Thai Green Curry Soup
1 stalk celery
1 large zucchini, peeled
Light miso
1 small avocado
1 handful fresh lemongrass
Cayenne to taste
Juice from ½ lime
Water to blend
Blend. Great with cucumber noodles, etc.
Curried Cauliflower
2 cups diced cauliflower
1 large avocado OR the meat of 1 coconut
1 small handful of cilantro
1 heaping teaspoonful of tahini
1 teaspoon honey
3 teaspoons miso or celtic sea salt to taste
1 heaping tablespoon curry powder
Red Curry Sauce
Maybe:
- Simply Organics curry powder
- Red peppers (I think they use chili)
- Coconut milk (baby coconut meat blended with its water)
- Celtic sea salt
- Soaked dates
- Cilantro
- Basil
- Lime
Serve over cucumber noodles. Add galangal, ginger, lemongrass, etc. if so inclined.
