Hello all-

I am in a 'transitional' phase to raw, and at the moment my office lunch is hummus with lots of raw veggies. The problem is, raw vegetables are a new world to me, and I can't think of any to eat raw beyond normal 'salad' veggies. Can you please recommend a few more and help me diversify my lunch?

I work next to a gigantic supermarket with oodles of fresh produce. Most vegetables I have only ever eaten cooked, and have no idea if it's safe or palatable to eat them raw...

Thanks!

Celery is a bangin' choice for dippin'.

You can't necessarily dip collard leafs, but it's a nice tasty surface to spread the hummus on. Cucumber and Bell Pepper slices sound good.

Oh, oh, there we are! Just ignore the slim-chance-its-raw-stuff in the middle and you're good to go. And it's better that you use red, yellow, or orange Bell Peppers instead of green, as the they're unripe (there are Bell Peppers that are green ripe, but I've read it's more likely the store is selling an unripe red Bell Pepper).

Welcome Kaila. :) Zucchini slices. Tomatoes sometimes, depending on the flavor of the hummus. You can either stuff them or spread on slices. You can also spread on raw crackers or add to wraps or salads.

I'm with DopeRawAbundance...veggies is GREAT with Hummus...Here's Zucchini Hummus from Alissa's Book! You can make Alissa's Hummus Wheels (putting Hummus on Cucumbers)...

Also, it's GREAT on a Sandwich... You can make bread if you like, or just use Romaine Lettuce Leaf, put Hummus inside and add slices of Tomato and Sprouts!!! You're only limited by your imagination!!! :D
