Matthew Kenney's mint with cacao nibs and his banana almond butter cup are equally *sublime*. They can be found in Everyday Raw. I have seen the recipes online but I don't currently remember where.

Banana Almond Butter Cup Ice Cream Using a Vita-Mix 4500 and a Samson 9001
I got this recipe from EverydayRaw also (by Matthew Kenney)
Ingredients:
1 cup cashews, soaked 1-2 hours
1/2 cup young coconut meat
1/2 cup agave
1.25 cups water
2 fresh bananas, ripe and peeled
1 teaspoon lemon juice
1/4 vanilla bean, scraped out
a pinch of salt (preferably sea salt)
1/2 cup coconut oil
3/4 cup Almond Butter Cup Pieces (see previous post for recipe)
1/2 cup cacao nibs
Directions:
In a Vita-Mix, blend everything except the Almond Butter Cup Pieces and the Cacao Nibs until the mixture is very smooth.
Stir in the cacao nibs and 1/2 to 3/4 of the almond butter cups. Put remaining almond butter cups back in the fridge.
Spread that mixture into a parchment lined pan and make a layer that is no more than 1 inch thick. Leave the mixture to freeze.
Once frozen, remove mixture and cut the frozen mixture into strips that will fit in your masticating juicer (set it up to homogenize- either mincing cone or open blank, no nozzle required).

For quick and easy you can't beat Alissa's Banana Ice Cream. Delicious and you can be eating it almost instantly!

I often make this recipe from Matthew Kenney Everyday Raw:
Cherry Chip Ice Cream
1 cup cashews, soaked 1 to 2 hours
1/2 cup young coconut meat
1/2 cup agave
1-1/4 cups water
1/4 vanilla bean (I use the entire bean)
Pinch sea salt
1/2 cup coconut oil
1/2 cup plus 2 Tbs frozen cherries, thawed and chopped (Note: I use fresh when available and dried cherries at other times. I have not tried frozen.)
1/2 cup “Chocolate Pieces” – this is another recipe -- I just use cacao nibs – I have even forgotten to put them in, and it’s fine without.
Blend all ingredients EXCEPT 2 Tbs cherries and Cacao Nibs in Vita-Mix until very smooth. Stir in reserved cherries and cacao nibs. Pour into Ice Cream Maker and follow manufacturer instructions. Yield 1 quart.
Also, Veganforlifehas an amazing recipe. I do not have coconut powder, so I add about 2 Tbs coconut oil and about 1/3 cup young coconut meat instead. It is DELICIOUS!
Raw Chocolate Chocolate Chip Ice Dream
2.5 cups of filtered water
3 handfuls of cashews - maybe 1.5 - 2 cups?
2 tablespoons raw cacao powder
2 tablespoons Alissa's coconut powder
10-12 medjool dates
1/2 - 3/4 cup of cacao nibs
Squirt of agave nectar
Put everything EXCEPT the cacao nibs into a high-speed blender (like a Vitamix-Mix) and blend until creamy. It will be thick.
Put into ice cream machine, adding the cacao nibs and use the ice cream maker as directed.
At first it's like a soft-serve ice cream, but this freezes well. It is YUM-OH!!!

One of my favorites is maple walnut even though it's not 100% raw but I rarely make it due to the time and cost.
You essentially make a vanilla ice cream by blending macadamias/cashews with water, agave and vanilla and running it through an ice cream machine. Then add chopped walnuts. Then look online for how to make SOFT maple sugar candy (it's absurdly expensive to buy pre made) by boiling maple syrup to a very specific temperature and let it crystalize and harden. Then break it into small chunks and add it to the ice cream.

Sport, Revdcryn, and Raw Eater thanks a lot for sharing these delicious recipes they all sound so good ..and completely reminded me to get my Matthew Mc Kinney book out of the side shelf ..where it's been hiding. Also Veganforlifes recipe sounds delicious. I can't wait to try it.
Raweater..I think I know the candy you are talking about. My b.fs brother got him some of it for Xmas..since he lives in Canada.. Putting it into ice cream sounds delicioso !

I eat away too much ice cream. It is not good for intestinal flora to eat too much frozen foods so I am going to cut it drastically.
Now I have to find something to take it's place.

Don't worry, that's not really true, because by the time the foods pass through your stomach and into your small intestine, they have warmed to body temp. They are in the stomach for upwards of 2 hours being churned, in which time they do melt and warm.
Quick and easy, but you need a Vitamix or Blendtec:
1 frozen banana
1 cup frozen strawberries (or cup of another frozen fruit of your choice)
honey to sweeten (about 1 tablespoon, or to taste)
1/2 cup of almond milk (I keep adding it a little bit at a time to get the frozen fruit to smooth out)
Blend until mixed
Yum!

What you say makes sense but I have read it twice in the past week, Chances are that one of those sources was copying the other so maybe it is only one persons opinion.
I am sitting here having a large bowl of strawberry ice cream while I write this.
