View Full Version : Sheet pans and the Excalibur

Hi all!
So I got the new Pure Food and Wine book, and it is awesome. But, Sarma talks about sheet pans that are about 13 x 18 which fit in the dehydrator. I have a sheet pan that size, and it doesn't fit. She does say it works in the 9 tray, and I have the 5 tray, but aren't they both the same width and length, with just a different height? I mean, the trays are the same size, they're only smaller for the 4 tray, correct? Which sheet pan did you find fits in the D comfortably?

Hi Sirova ~ I've got the 9 tray, so I tried it out. My 13x18" cookie sheet will not fit side to side. The ex. trays measure 14x14".
Now - it will fit with the 13" end sliding in first towards the back - but you would not be able to put the door on as 4" of the cookie sheet are sticking out the front. Maybe she leaves the door off?

Thanks! Glad it's not just me! Mm maybe I will. There is a recipe for caramel bars which is amazing. And a milk chocolate mousse cake. This book's awesome!

According to this link,there is a quarter size sheet pan 13x9 - perhaps that is what sarma was using?

she is on Facebook alot..you could message her there and get a fairly fast response.I have done so in the past.
I bought a small cookie sheet at either Target or Walmart that fits into our RV's small oven. Hopefully you can find one locally too. *Ü*

I asked Sarma, and she says they use regular sheet pans, nothing special or fancy. I'm thinking I might get sheets half that size anyway, so I can cut the recipes in 2. They make too much for my husband and I usually, and I like to make less the 1st time in case I mess something up ;)

I don't get how she can fit the regular size in the Excalibur though... Did she say how she does that? Maybe hers is a bigger restaurant size? *Ü*

I am not sure... No, she uses the regular Excalibur, apparently. Mmm maybe her staff gave her the wrong measurements or something. That's fine either way, I'll give it a shot with a smaller pan and let you all know if it ended up too thin/thick :)

I would think that Sarma uses the commercial-sized dehydrators. I think I saw a picture of the Pure Food and Wine kitchen with huge dehydrators in there. Not sure, but that's what I think.

In the book, she clearly states that she uses regular 9-tray Excaliburs. But, I may have read that part wrong. Regardless, how could one Excalibur fit larger sheet pans at the bottom compared to another one? The trays do have to hold on to the sides somehow. The only way for the D to be bigger would be to have bigger trays, which isn't the case apparently.
