View Full Version : Simple Vanilla Chia Pudding

This simple vanilla pudding is delicious, ultra-quick to make, and is a great carrier for maca powder. Increase energy levels, increase healthy fats and protein, and balance hormones? Check!

Ingredients (serves 2)
- 1/2 cup really raw cashews
- 1 1/2 cup water
- 2 T agave nectar
- 1 inch piece vanilla bean, whole (not scraped)
- 1 t maca powder
- 4 T chia seeds

Directions
Blend the cashews, water, agave nectar, vanilla bean and maca until smooth. Pour the liquid into a bowl, stir in the chia seeds, and set aside to thicken for about 20 minutes. Eat right away or store in the fridge.

this is way better than any chia pudding that I have ever attempted to make. Thanks for sharing.

Thank you Paul! I love this one, but it's not even at the top of my favorite chia pudding recipes :) Be sure to check out the other ones! The Calcium Rich chia pudding is awesome if you like sesame seeds (it's not bitter).

Thanks for sharing. I made a variation of this this morning. I substituted banana for the cashews as I was looking for a low fat treat. With the banana's sweetness I didn't need agave.

My version

1 1/2 C Water
1 Banana
2 t maca
3 T Chia
Dash of Raw Vanilla Powder
Cinnamon and carob sprinkled on top
