I've been buying the bag of dried, organic coconut in the bulk aisle at Whole Foods because it seems like such a load of work to get a coconut and dehydrate the meat before using it in a recipe. (Or maybe it doesn't need to be dehydrated?) I read the back of the bag and it says that it's dehydrated. Anyone know if it's truly raw?
