Vanilla Pudding of the best kind! I dare any sadeaters to say it isn't. ;)
3/4 oz soaked Irish moss
1/2 to 3/4 cup water
Blend until smooth and thick, scrape down sides of blender often so there are no chunks of Irish moss left.
Add:
1 cup coconut milk (made by blending the water and meat of a young coconut)
2 to 4 Tablespoons agave or honey (depending on how sweet you like it)
1/2 teaspoon vanilla extract
pinch pink salt
Blend until smooth. Pour into a shallow glass pan, cover and put in fridge for at least 6 hours. When ready to eat, spoon into dessert dishes.
If desired, spoon over sliced banana and top with chopped walnuts. Garnish with a few raisins and a sprinkle of cinnamon.
