I finally got my excalibur yestrday and am ready to try this again, but I wanted to have a better plan than just gorging on kale until I am to bloated to sit up straght! LOL This is what I currently have in my kitchen:

spinach
broccoli
peppers
avocados
onions (yellow & red)
tomatoes
celery
apples
oranges
bananas
tangerines
pears
almonds
sunflower seeds (no shell)
cashews
pumpkin seeds
chia seeds
medjool dates
various spices
vinegars
Bragg's
soy sauce (def NOT raw but will use till it's gone)
nutritional yeast

I am planning on picking up some zukes and cukes from the market in my building later today. I also have access to cheap lentils for sprouting

I'm not sure that I am willing to take the cold turkey pledge, I more wanted to have a solid foundation of raw staples so that I could add on as I went. The last time I tried, I ended up eating nothing but green smoothies and guacamole and veggies everyday and can you guess why I failed? I have several raw cook books and i see all this variety and creativity in there and on various forums, but for some reason, it just doesn't translate into my daily life. I'm not asking anyone to do all the work for me or anything, I just need ideas of things that can make a normal daily diet. TIA for any advice!

I'd suggest picking up Alissa's book and dvd's. She's got exactly what you're looking for in them. A full menu plan plus, how to create the various recipes easily.

I make TONS of Alissa's flax crackers because they only have 4 ingredients and are super-easy. And I use regular soy sauce in those, too.

Hoorah for lazy raw fooders!!!

You have a well stocked kitchen. :)

Did you get any solid paraflex sheets with the dehydrator? If so, I would made some fruit roll-ups to keep handy for snacks. Banana would be good, so would pear.

Soak almonds, sunflower seeds, and pumpkin seeds, separately. After soaking, stir them each up with a splash of braggs or soy, and coat with some spices, chili powder, cumin, cayenne. Dehyrdrate 24-48 hours. These are great for snacking or enhancing a salad.

Soak some cashews and blend with (red, yellow, or orange) pepper. Add water (or almond milk), enough to make it blend. Optional; nutritional yeast, garlic. Put chopped spinach, broccoli, and onion in a casserole dish. Stir in the sauce and dehydrate (uncovered) until the veggies are wilted and warmed. Optional; top with chopped tomato and spices like oregano or thyme. Eat immediately.

Make your own Larabars. Grind almonds in food processor, add pitted dates one at a time (approx equal to amount of almonds). Optional; add a pinch of salt and vanilla, chopped cashews, pumpkin seeds. Roll into balls or shape as desired and dehydrate until outside is not tacky.

I can't think of anything to use avocados for that is dehydrated. I would eat them "on the quarter shell". Don't peel, cut into four pieces, remove pit and sprinke with salt and pepper. Eat up!

Seems like you are well on your way with lots of Fruit and Vegetables. I try to keep it Simple. What are you most interested in making? Crackers are one of the most easiest things to make and dehydrate. Give the 30 Day Challenge a chance.
