View Full Version : Coconut Milk vs. Coconut Water

On pg 540 of her book Alissa calls for coconut milk in a recipe. On page 537 sge calls for coconut water. From looking carefully at these recipes I think she means coconut water for both uses. I had always thought that coconut milk was the flesh and water blended together and then strained. But, I certainly could be wrong here!
Can someone please enlighten me?

coconut milk is the liquid that is already present in fresh cracked coconut.
Coconut water is similar to hemp milk (hemp water), you take the flesh of whatever food (hemp, coconut, almond) powder it, strain it and wallaaa. XXX water. Obviously fresh coconut milk is healthier.

I thought it was the opposite, with coconut water being the liquid that is present in the coconut when you crack it open. And the milk being the liquid you extract or squeeze from the meat of the coconut.

Coconut milk is a sweet, milky white base derived from the meat of a mature coconut. The colour and rich taste of the milk can be attributed to the high oil content and sugars. Coconut milk is not the juice found inside a coconut, but the diluted cream pressed out from the thick, white flesh of a well-matured coconut.
Coconut water is the clear liquid inside young coconuts.

In my raw recipe world....
coconut water: the liquid that is in a young, white coconut.
coconut milk: what you get when you blend the liquid (water) and the meat in a young, white coconut.

Thanks, everybody. 'Nee, I had googled it and got conflicting info!
Now I have decided that Alissa uses the terms interchangeably, so when she calls for coconut milk I will use the water.

The water of the young coconut in Summer and the milk of the old in Winter surpasses the milk of the young in Winter and the water of the old in Summer. Being it's colder up North than it is in the Fall, the difference between a mid-season coconut is like the Spring chicken in that one of its legs is both the same.

I don't suppose it matters much as the only recipes that Alissa calls for coconut milk are drinks. In that case, the drinks simply won't be as rich or thick if you use water instead of milk.
In other recipes the difference between coconut water and coconut milk can make a huge difference to the end result.
Just to clarify, the descriptions I gave comes from a Cafe Gratitude book, "Sweet Gratitude - Raw World of Desserts".
