I got this off another site, and adapted it:
half a head of cauliflower, cut into florets
bunch of parsley, coarsely chopped
1/4 of medium onion, coarsely chopped
about a 1/4 cup of mint leaves
3 T extra-virgin olive oil
juice of one lemon
salt+pepper
1/4 cup or so of raisins
Process cauliflower floret into rice-sized pieces, then add everything except the raisins, and process briefly until everything is in small pieces(but not mush!). Empty into a bowl and add raisins.
This is SO-O good in a collard wrap with some zucchini hummus and halved cherry tomatoes - this is what I'm having for lunch right now!
One could stick some of this into larger tomato(when they're back in season)for stuffed tomatoes, or stick a great big old scoop of this in with some salad greens, diced sundried olives, shredded carrots, etc. for a meal salad too.
