I mean are these raw? They gotta be raw right? They're not raw are they. Why do I even bother.

Some are, some aren't. If they say "roasted"... well, you know. ;)

It's a mix of Almonds, Brazil Nuts, Hazelnuts, Pecans, and Walnuts. They're in a net bag with a label that simply says "Fresh Produce". They don't look or taste roasted.

Hmmmm. Probably not then. Usually they'll say they are. Not salted either?

They are most likely raw. Pecans are often roasted in the shell, but I don't see why you would want to do it with any of the others.
The reason why a lot of shelled nuts aren't considered raw is because the shells are often heat treated to make them easier to open.

They also come in a fruit, like a small green peach for the walnuts. How do they get the fruit off?

Probably some kind of heat treatment. how does that affect the nut itself?

Needs more research!

Well from experience I can tell you that the fruit of walnut trees is EXTREMELY soft, like mush. To get off the junk you could easily water blast it. After they fall off the trees you have to wait at least 2 weeks for it to cure and develop the proper flavors.

Pistachio fruit is a little crisper, and is probably the worst smelling thing ever. But it does take a lot more work than walnuts to get off if you don't let it drop to the ground.

Nah they're not salted. I just noticed the walnuts have a red stamp on the shell that says "Diamond" on it. Maybe I can hit them up.

I have a local co-op in town that I get all my nuts and seeds from. Alot of there stuf is listed organi,c or they basically have an organic option for all theri nuts. They also have a roasted, salted, and raw version of some nuts/seeds. I usually just get the raw versio, but it always helps to ask, or research if the nuts or seeds you are eating are raw.

There definitely is a taste difference between cooked nuts and fresh.. Cooked are usually harder than their natural counterparts, and raw are firm but soft to the chew. I love raw cashews now compared to roasted. I was never really a fan of roasted cahsews on SAD, but raw cashews is like butter mmmmmm. They have this delicious soft texture that isnt hard on your teeth and taste amazing. Same goes for pecans and almonds.

Its really worth the effort of cracking each nut one-by-one, the Hazelnuts taste notably better than the shelled ones I've been buying. Do yourself a favor and crack:

3/4 cups Hazelnuts

Blend with:

2 cups Spring Water
about 3 tablespoons Carob Powder
about 1 tablespoon Psyllium Husk
a splash of Maple Syrup (do you really think I measure this stuff?)
a pinch of Cayenne

You can also add sprouted/dehydrated buckwheat for an extremely satisfying crawnch. It's like drinking a Ferrero Rocher.
