View Full Version : Better than Cadbury Fruit and Nut Bar

If you like dark chocolate with sweet berries and crunchy nuts, you will love this bar. Loaded with minerals and healthy fatty acids, this chocolate hardens quickly in the freezer and is firmer than chocolates made with coconut oil.
Ingredients:
- Half a cup cacao butter (melted amount)
- Half a cup cacao powder, sifted
- 2 T agave nectar
- 1/4 cup goji berries
- 1/4 cup almonds, chopped coarsely
Directions:
- On a 7" plate (you can use the bottom of a springform pan), arrange the almonds and goji berries so they are uniform. You can also make little ones using a muffin pan!
- Mix the cacao butter, powder and agave nectar until smooth. Pour gently over the berries and almonds, until uniformly covered.
- Place the plate in the freezer for the chocolate to firm up, about 15 minutes.

A few years ago (before I read up on chocolate) I regularly made a similar bar but I used cashews (did not have raw almonds at the time).
Sometimes I used coconut butter instead of cocoa butter.
You are rekindling memories.
It is amazing how we progress on our journey. At that time I considered that bar to be food whereas now I would consider it to be naughty (nothing wrong with being naughty from time to time).

I made these for dessert last night. They were awesome. The agave must not have mixed in very well because some parts were quite sweet and some very bitter. MY son wasn't impressed by the bitterness but that's OK cause now I have some left for the next couple days:D:D Thanks for the simple recipe.

Oooh yes I should have mentioned that! I love dark chocolate and add little agave. I would double the agave for children (or my husband!), if they like sweeter chocolate ;)
I also mix my agave with the cacao butter, and then add both together to the powder, so everything is well distributed.

Ah, good idea mixing the agave with the cocoa butter. Next time and maybe I'll add some more agave or maybe not!!! Do I want hubby and son liking it too much?:p

I always melt the grated cacao butter in the dehydrater and warm the agave, too. Then mix the wet ingredients before adding the dry. The problem I have is figuring out how much grated cacao butter I need to get the correct measurement after it is melted. As usual, I came up short on melted cacao butter. Do you have a formula that you use to get the melted amount that you need or do you eyeball it based on your experience?
Sirova, thanks for the recipe. It is indeed quick and easy. I added a 1/4 teaspoon of vanilla extract (alcohol free) and a pinch of pink crystal salt. Poured it over chopped macadamias and gojis. It is shareworthy, but I won't be sharing much. ;)

Yes, I fill a measuring cup with twice the amount of finely grated cacao butter (I actually grate a whole bunch and put it in a baggie so I don't have to grate it all the time!) and it melts to just the right amount! But it won't work if it's not finely grated, you'll need a little more. :)

Let me know if you try it! My husband thought he didn't like raw chocolate until I finally used the Navitas brand cacao butter. He said it made a huge difference, so do get a good cacao butter if you can.
