It looks like Chinese greens are going to be the new staple in my life for the next year at least. I'm going to experiment with all of them but the regular ones I have ie bok choy and choy sum I find difficult to imagine having any other way than steamed. Does anybody have a good way of preparing them? Maybe chopping them down adding sesame seed oil, chilli and soy sauce for a salad or smthng?..

This is such a yummy salad that uses bok choy, Sprouted Quinoa Salad (http://www.youtube.com/watch?v=487VK0YMWvA). Quinoa is really easy and fast to sprout.

When fresh corn's available - this is another good one ~ Baby Bok Choy Corn Cilantro Salad (http://www.youtube.com/watch?v=oolCJm_xMHc).

I buy the baby bok choy at the Asian market, about 3-4" long and I juice it and toss about 5 or 6 in my green smoothies. I plan on chopping a few of them into my next lettuce salad too. *Ü*

I just checked my recipe file and found this one. I haven't made it yet, but it looks good. Mmmm - I may have to make this for dinner while I still have all the baby bok choy...

Feature Recipe: Storm recently made this amazingly delicious Bok Choy salad/slaw. Bok Choy, a light green crisp sweet chinese lettuce (actually a cabbage) available in most produce sections is high in Vitamin C and A and calcium. http://www.thegardendiet.com/index.html

Bok Choy Salad

Chop up and put in a bowl:
~ 4 bunches Bok Choy
~ 2 tomatoes
~ 2 avocados
~ 1/2 bunch cilantro

Dressing:
~ 4 tablespoons raw tahini
~ 2 tablespoons raw honey
~ 1/8 cup apple cider vinegar
~ 4 tablespoons olive oil
~ herbs and spices (experiment with what you have available)
~ salt to taste with unrefined sea salt

I chopped up some bb bok choy with a gingery sweet and sour dressing with chopped red peppers. An onion lover might add that as well, but I don't like onions too much....

or add mushrooms and pop into the D for an hour or so and serve over somekind of "rice" sub? or zuke noodles?

Just snagged DebB's recipe for the Bok Choy Salad - this sounds so-o good. I'm only 10 blocks away from Chinatown here in SF, plus there are Asian-run markets even closer - bok choy of all sorts is all over the place - LOL!

I made a version of the last recipe yesterday. The changes were as follows:
3 bunches bok choy
3 tomtatoes
2 avocados
1/2 bunch garlic chives
1 spring onion
1/2 bunch Chinese chives

omited the honey, herbs and forgot the oil.

It was pretty good. Bok choy rather lends itself to salads and many other things I think. I had never had it in any other way than steamed before but now I see it rather flexible. I am eating the rest of the salad later today :)
