Does anyone have a recipe for a Salad Dressing based on coconut meat instead of nuts. Like...
Thousand Island Dressing
Ranch
Etc.
My kids are interested in dipping veggies.
Dehydrated stuff like tomatoes, or imported stuff like nuts are very hard to find.
We are making a mayo by blending young coconut meat with lemon juice. Sometimes we add a piece of garlic and/or some salt or seaweed. To make it more creamy a little coconut oil works or I put in my flax oil.

Honestly, I rarely follow recipes exactly myself and get some RAWESOME dishes. :D So my recommendation is just that you substitute the coconut meat for the nuts in any existing recipe and see what happens! :D

I actually didn't consider that... Thanks GW... It might be worth a try.
I was trying for something like the mayo, ketchup, pickle relish thing... Sun dried tomatoes (if the sun every returns from the wet weather we have now!) And coconut mayo come close to mayo/tomato paste. But where do I get the sweet pickle relish tang?

Here's a few I found:
Thai Coconut Curry Salad Dressing
Coconut Water
Coconut Meat
1 red sweet Pepper, 1/2 to garnish
1/4 cup Basil
1/2-1 Garlic clove
1 tsp Lemon juice
1/2 tsp Curry powder
Cayenne pepper to taste
dash lemon grass or balm
1/4 tsp salt
blend.
3/4 Cup grated Coconut
3 Garlic cloves, crushed
1/2 Onion, chopped
1-3 green Chilies to taste
1/2 Cup water
1 tsp Sweetener
salt and pepper to taste
1 cup grated Coconut
1/4 cup Lemon juice
Honey
1 cup Corn
salt to taste

The second one my wife liked but a little to spicy for my tender tummy.
The third one maybe able to be modified. I'm alergic to corn but my Honeybun suggested replacing the corn with cucumber - I don't know how that will work but hey, it is worth a shot, right! I will post again what happens!

Please let me know what you find out, as my digestion sounds similar to yours, and would love to find a good dressing that would be creamy as well/

Currently we are using
coconut meat
2 teas flax oil (or a Tbls Coconut oil)
about 1 Tbls Tibicos Buko to consistency
Braggs Kelp seasoning to taste (or their herb seasoning)
We plan on learning to sun dry roma tomatoes to add to this.
Sometimes we add a little honey
Plus chopped cucumber, bell pepper or sweet purple sweet onions for variety.
I am not sure if the Braggs is considered raw. We are not demanding when it comes to dried spices.
