Ok, so in December I went a little nutty on the kelp noodle consumption. It was just so much fun to have a new food and new texture on my plate.

But eventually, eating them 3 days a week seemed to slow down my digestion.

Any comments??

I know that ultimately, my body guides my eating but I just felt like asking around. Who the heck else am I going to ask

I know what you mean. I was happy to have something new to try for awhile. I have an unopened bag of kelp noodles in the fridge that have been there for a couple months. I have not wanted to eat them. There is no dating on the bag. I wonder how long a shelf life the noodles have?

I haven't touched any seaweed or salt in over 2 years and I feel fantastic! I used to find those noodles negatively impacted on my digestion also :(

I've never felt those noodles are 100% raw so I never bought them. Tasted them once at a potluck and found them flavorless. Zucchini pasta tastes way better and is healthy.

I think they are a nice treat. Did you soak them first to plump them up? I found they were better the second day, after soaking in a raw soup base.

Otherwise, they would soak up stuff inside you, thereby making digestion more difficult.

So, soak them first, is my thought..

Again, I don't use them as a staple, just as a treat.
