View Full Version : Chocolate Orange Dessert

I started making a chocolate orange smoothie that ended up turning it into a sort of cheesecake. I didn't take exact measurements. With these ingredients I don't think exact measurements matter. All good. It is only after having made several cheesecakes from "Sweet Gratitude" (including the Chocolate-Orange Cheesecake) that I had the confidence to throw this all together and know it would work.

Juice of 2 oranges
large handful of cashews (not soaked as this was spontaneous)
2 spoonfuls of vanilla liquid* (vanilla liquid is 3 whole vanilla beans blended with 1 cup water, stores in jar in fridge for weeks) (if subbing vanilla extract use about 1/4 teaspoon)
2 pitted medjool dates
2 squirts of agave nectar
1 spoonful cacao powder
1 teaspoon maca (optional)
2 teaspoons lucuma (optional)
pinch pink salt

3 Tablespoons coconut oil (melted)
1 teaspoon liquid lecithin

Put all except coconut oil and lecithin in blender. Blend until smooth, taste test and adjust as desired.

Add melted coconut oil while blending on low.

Add liquid lecithin while blending on low.

Blend on high for about 20 seconds or until the oil and lecithin are incorporated.

Pour into 3 dessert cups (it made about 1 1/2 cups). Put in fridge for an hour or two until set.

It will set up firm like a cheesecake. No one will know it is a raw dessert. ;)
