Hi,
I'm thinking of getting some almond butter, but the company I'm ordering from offer 2 different types: Whole (with skins) or White (without skins)
Do I take it that ones with skins don't taste as good, but are more nutritious? I know that alomnds are high in calcium.. is this in the skins? Any help would be great!

Is the white raw? I don't know if blanching would count as cooked, although I have seen directions for blanching in a raw cookbook, I don't know if you could count on a manufacturer blanching safely. Almond skins contain some chemical that can upset your stomach, I can't remember what it is. So I guess the theory would be if you eat to many almond skins it might be bad for you.

What company is it? Make sure it's truly raw because most aren't regardless of the raw label. It's better if you can get one sprouted.
Blanching counts as cooked.

Oh I forgot to mention about that... it does say specifically on the website the almonds are blanched via a non-heat method, and they only sell raw products, so I trust them ;) I had not heard about skins of almonds upsetting stomachs?? Anyone else heard of this?

Some companies that make raw almond butter are still using California almonds that have been pastuerized, so it isn't really raw. I recently bought a jar of questionable rawness because I didn't want to use the extra gas or pay the extra $10 to get a jar of butter made from truly raw almonds. No harm done. ;)

Does anyone know if there is a lot of nutritional value in the almond skins? Knowing that almonds are a great source of good calcium is an incentive to have almond butter, but if the calcium is in the skins, then i'd buy the whole almonds butter. I know that with sesame seeds the calcium and iron are all in the outer shell, so wondered if its the same for alomonds?
