I've done this a couple of times, and it works out really well for sitting down to eat with the family.

slice up about 1/2 lb of mushrooms and place in a caserole dish, splash just a Tspoon or so of evoo, 1/2 that of acv, sprinkle with salt &crack a wee bit of pepper over, stir well, and place casserole in the bottom of the D - I like to invert 1 casserole dish and put the food on top - it stays cold at the bottom of the D.

put on water to boil for whatever you're fixing for "the others" get that meal going....

after the mush is going 20-40 minutes....

Then spiralize a zuchini into thin noodles, add them into the mush dish, and I use my hands to make sure they get coated with the remnants of the stuff on the mush. add a bit more if they aren't getting anything on them

While finishing the other meal stir or flip over the mush and zuke mix once or twice....

It's pretty quick - and can be ready in just a bit over the time it takes for a 'regular' meal.

It is flavorful, but basic, and you can add marinara sauce if the family is doing italian, or some asian or indian flavored sauce, to blend in with what the familiy is doing. The sauce would need to be done beforehand, but you could put a shallow bowl into the D with it to warm while the M&Z are uncooking....

Lots of time on raw - I can't have the 2 meals come out together...and I miss the bonding. This is one dish that I can count on being ready about the same time if I just start it right beforehand.

Oh! Evoo! Extra virgin olive oil! Lol. I was just about going to ask you what Evoo was...but then it hit me.

Sounds delish. Good tip. Thanks
