From what I've read you can't make it using chia seeds alone but mixed with nuts or maybe other seeds. So you'd just take one of the nut milk recipes and add chia seeds to it.

It'll taste like watery liquid with no flavor. Chia has no flavor really on it's own. The sweetener won't do much for it. Need something to give it a milk consistency. You can just use it in a smoothie or pudding instead if you don't want to do the milk.

Besides the additional very valuable nutrients that chia seeds offer, I'm thinking that the jell effect just might help prevent nut milk from separating! Anyone know about that?

I wouldn't think that chia milk would come out very well either.
Now, creamy chia pudding (http://therawtarian.com/raw-chia-tapioca-pudding-recipe/), that's another story. My household is addicted to it.

the chia milk was too thick to drink
and tasted of nothing
in the end i ended up pouring it into a bowl and eating it as porridge with some sweetener
It was far too thick.
