All those are GREAT!!! Aleesha, I have to try the Cucumbers!!! Never thought of just that...actually sounds yummy!!!

Man that eggplant looks good, Renee! Which recipe do you use? I tried it once, and it was awful, but I want to give it another whirl!

I bought the onions yesterday. Going back for an eggplant today. That bacon is making my mouth water.

My fav bread ever! Love Alissa's swiss cheese on it, with cucumbers and/or tomatoes.. Also untuna, eggless salad, veg burgers, etc.

The eggplant bacon sandwich was rawsome! I used Matthew Kenney's eggplant bacon recipe from "everyday raw". I didn't have dried chipoltes so subbed chipolte powder. Whoo-hoo! Spicey! My sandwich was the eggplant bacon, a slice of cucumber, red leaf lettuce, and pine nut mayo, (pine nuts, ACV, honey, olive oil, and sea salt blended in the Magic Bullet with the flat blade). EXCELLENT!
I also made some shells with the onion bread batter. Since I couldn't decide which recipe to follow to fill them, I ended up throwing various ingredients from each recipe in the food processor. Pine nuts, leftover cashew sour cream, red pepper, chopped portobella mushroom, and nama shoyu. Tasted a little bland. Spiced it up with sea salt, cumin, and thyme. Added spinach and pulsed just enough to chop it up. It was great as a spread on onion bread. Also used it to fill the tarts. Warmed it up a bit in the dehydrator before serving. EXCELLENT!
The picture below shows the two onion tarts at the top. In the middle are squares of onion bread with filling spread on top. I ate it all for dinner tonight. :o
The mushroom at bottom of pic is coated with olive oil, cumin, and thyme. It will be made into a mushroom burger with two remaining onion bread tart shells. Since I'm supposed to be going on a cleanse tomorrow, I'm wondering if I can freeze the remaining onion bread and portobella burger. ??

I had some of the chocolate ganache from Jennifer Cornbleets book in the fridge and some onion bread (but I blend the onion up and only used one onion) and I spread the ganache on it and it was yummy as a chocolate spread. Weird maybe but yummy!
