Raw Foods Lemon Cheesecake (sorry that the pic is blurry):

So I made this the other day...and wow. The crust has the exact crumbly-ness of a traditional New York cheesecake, and the filling...wow. It was, again, the exact texture of a high-end, frozen, New York cheesecake. I was totally shocked. My stepdad LOVED it, and he hates cheesecake!
It is seriously the best (and most surprising) recipe I have ever tried. I got the recipe from Recipezaar.com, which I think is the best recipe site, and if anyone wants it I'll post it!

Whoa! That sounds fabulous - pretty please for recipe? Although I didn't eat it very often, I did love a small slice of NY-style cheesecake! I'm sure other people are waiting here too - LOL!

Love it! Raw "cheese"cake is so much easier than it looks. I've tried a few. My favorites are from the book "Sweet Gratitude New World of Raw Desserts". I will have to check out the site you mentioned. :)

I've never heard of that book--I'll definitely look into it. And Recipezaar is just a general recipe site, but it's very well organized and I've found a lot of good raw recipes from there. Tell me what you think of it!
Here's the cheesecake recipe:
Crust:
2 cups almonds
1 cup dates
Process until fine, then press into a 9-inch springform pan.
Filling:
3 cups cashews (soaked for at least 1 hour)
3/4 cup lemon juice
3/4 cup raw honey
3/4 cup coconut oil, liquefied
1/2 cup water
1/3 vanilla bean or 1 teaspoon vanilla extract
1/2 teaspoon Celtic sea salt
Berry Sauce (optional):
3 cups frozen berries
1/2 cup dates or 1/4 cup honey
Directions:
1. Put all filling ingredients into food processor and process until very smooth. Pour into pie crust and tap the pan on countertop a few times to remove air bubbles.
2. Put cheesecake in freezer until firm, at least 3 hours, but I usually do it overnight. The freezer step is important because it sets the mixture. Transfer to fridge and it will be ready to eat after about an hour.
3. To make the berry sauce, blend or process ingredients until smooth, and adjust to taste. Store in airtight jar in the fridge, and spoon a couple of tablespoons onto slices when serving.
Note--I used about 1/2 cup honey and used liquid stevia to achieve the rest of the desired sweetness. I also found the coconut oil to be slightly overpowering, so I also grated the zest of 2 lemons into the filling mixture.

And I used to use Recipezaar quite frequently with SAD eating, but never thought to check for raw recipes. Thanks for the tip!
