I've just got some raw, organic almonds and am wanting to make a nut milk by blending it with water in my Vita-Mix. I just wondered, is there any need to soak the almonds? They seem quite hard, but I'm assuming the Vita-Mix would give me completely smooth results? I know you should soak nuts to release the enzymes, but I've had trouble soaking almonds before... they seem to go bad after just a few hours of saoking. It was a long time ago, but I think like the water surface had bubbles of white.. if that makes snese! any help would be great!

Yes, it's very important to soak so you don't ruin good enzymes.

Soak overnight. Maybe what you were using were not raw and what you saw was poor lil almond detox. I dunno but, you should not have any trouble with an overnight soaking. I never have even in the hottest of days here in sunny SoCal.
Yes, not soaking you will still get a smooth milk ~ still might want to strain though... then again, maybe not.

Hi,
My husband has been making delicious almond milk with the vita mix.
The recipe he got from a raw food chef was with unsoaked almonds.
I imagine it would be better to soak, but this almond milk sure is tasty and easy to make up last minute!

I made fresh raw almond milk yesterday. I soaked the raw almonds for 5 hours. It came out wonderful! I used a vita-mix and nut milk bags.

Beth, I am definitely wanting to try that raw almond milk with the banana and raw cacao. I have some raw almonds in the fridge...and some of the cacao nibs, can I use those too?

You can always soak them in the Fridge. I soak mine, Peel them and make the Milk, I know I could leave the peeling out but that's how I learned to do it and I have "White" Milk.
The Vita-Mix will Chew up a Tree if you can cut it into small pieces to fit into the Canister.
