Your fav raw PESTO recipe please?? =D

My boyfriend wants to actually make an uncooked dish for xmas dinner just for me, and he's going to make pesto... so I'm trying to pick a yummy recipe to give him!
I've tried one once that used sunflower cheese in it, and that was yummy... also heard of one using pine nuts, which sounds yummy.... SO, your fav pesto recipes everyone???

My favorite pesto is the one used in Alissa's Pesto Stuffed Mushrooms. It is excellent as a spread on pine nut crackers.

I agree with Raw Knitster ~ that's my favorite pesto as well. I bought mushrooms today to make this. It freezes well too (the pesto itself, I've never froze the stuffed mushrooms). *Ü*

Depending on how much you're making, it is economical to use some spinach instead of all basil=)

You can make pesto from cilantro as well; it's quite tasty.

I haven't made pesto lately, but I've had success with blending almonds and basil. Usually the recipe calls for pine nuts, but substituting almonds works well and is more economical. Tastes better than storebought. I used to make that recipe even before I knew what raw food was! Let us know what you make and how it turns out.

I ended up using:
Olive Oil
Basil
Parsley (lots)
"Pinenut-y goodness" (see below)
garlic to taste
salt to taste

"Pinenut-y goodness" as I call it is simply these ingredients blended:
Pinenuts
Olive oil
garlic and salt to taste
(it should taste sweet when done)
