View Full Version : Question about cocoa powder and maple syrup

hi! i am new to learning about raw foods and just got some raw food cook books! a lot of recipies call for cocoa powder and maple syrup. if i buy pure, 100% cocoa powder and pure, 100% maple syrup, do those products also have to say specifically saw "raw" on them or are they raw either way?

They're cooked unless they say raw and, far as I know, maple syrup, just by the nature of getting it out of the tree or something, is cooked.

You might wish to look for cacao powder instead of cocoa.

oh okay, thanks for letting me know. i had been wondering about that since raw food cookbooks mention them. perhaps they are assuming that ppl are not eating 100% raw food. i really appreciate your help! what do you use for sweetner? there is such thing as raw agave right?

A lot of people use agave but there is a question mark regarding it's rawness.
Some use raw honey and it is probably the healthiest option but not vegan.
Most raw foods are already sweet enough and do not require any.

Yeah, agave is questionable but I use it. Dates, honey and orange juice if you can find it sweet. Apple juice as well; raisin juice.

The getting-it-out-of-the-tree part is heat free as far as I know... it comes out of the tree as basically a water that doesn't taste sweet at all. 'Til they go 'n boil out the water and you're left with sugarheaven... my god maple syrup sounds delicious right now. Anyway, I've read a way to do it by freezing and unfreezing or some'n, which supposedly concentrates the sweetness but still doesn't quite come out to a sensationally sweet syrup.

I wonder if using the dehydrator to concentrate it down to syrup would work? Could you imagine raw maple syrup? I'm up to trying to find some hot trees to jack sap from when the season's right.
