View Full Version : Apple Cranberry Chia Cookies

I've been making these for the last few weeks, they're sooooo good and versatile and filling, plus they give you tons of energy (I just ate three and am bouncing off the walls). My favorite thing is that they're so forgiving (like flax crackers) so I just throw stuff together without measuring and they turn out slightly different but totally delicious every time! So the recipe is approximate:

Apple Cranberry Chia Cookies
2 Apples
1/4 c Raisins
3 Dates
2 TB Agave
2 TB Cinnamon
1 TB Ginger
1/2 t Allspice
3 Cardamom Pods
1 t salt
1 t Vanilla extract or 1" Bean
1/2 Lemon's juice
-Blend smooth, then pulse in:
1/2 c cranberries
Handful raisins (the red kind are really good)
Mix with Chia gel (2 TB Chia + 4 TB water/apple juice/coconut water), about 1/4 c hemp seeds or grated coconut, then stir in enough coconut flour to make a good dough-like consistency (about 1/2 c)
Use ice cream scoop to scoop dough on teflex sheets and flatten into cookie shape. Dehydrate at 105 overnight, flip and remove teflex, dehydrate a few more hours until they're the consistency you like.

These would probably be really good with blueberries too, but I can't find any for less than $5 a pint right now... :(

Also, I know coconut flour isn't actually raw, but neither is grated coconut or nuts, so I'm okay with. Plus it's a super good fiber source so the benefits outweigh the non-rawness for me!

Wow, these sound great! My wife just brought home some chia seed so I am subscribing to this thread....in fact I will probably sub in the blueberries due to cranberry allergy....fasting right now but when it's safely broken....cookie

Yay! Glad they sound good to you and that cookie monster pic rocks! That's what I feel like when I'm eating them, but no guilt or tummyache afterwards :D

As long as you can scoop the dough and shape it into cookies without it running all over it doesn't matter, the dehydrating time will just be a little different

ok i am bumping these up because they are THE BOMB!!!

BEST dydrated cookie i have ever made. no nuts and totally versatile. you can mix and match it all day long.

thanks!!! i had cookies on christmas ;) first time in probably 10 years!!

I'd like to make this recipe only I don't know what coconut flour is or where to get it. Can I make it myself? :confused:

I'll have to find a co-op. Maybe it is out there at the stores I usually shop at and I never noticed. :)

I've been using Bob's Red Mill brand which seems like a brand most stores carry or can at least special order for you

I hope u like them as much as I do anniez!! I made them with blueberries and they weren't as good imo... Not the best blueberries I ever had though, so that could be part of it. Back to crannies next time! :D
