I got to trying to come up with a recipe for chips and here's my partial list so far. I think that these will make good, crunchy chips; I'd like to see if anyone can add anything:
Beet rounds (thinly sliced)
Carrot rounds (thinly sliced)
Cucumber rounds - I did make these but the trick may be to make the slices THICK, 1/4 inch or so
Sweet Potato rounds (thinly sliced)
Zucchini rounds (thinly sliced?)
I haven't made anything other than the cucumbers as chips but I sliced them as thinly as I have when I've made potato chips. No good. They came out less than wafer thin and were extremely difficult to peel off the lined dehydrator tray <g>).

I'm sure you have done Kale Chips. Sweet Potato Chips are Great. Experiments makes Great Recipes.

No, unfortunately experiments don't always make good recipes. I've ruined too much food and gave up striking out on my own a long time ago before there was internet. I can't afford it. So I always look for recipes _first_, then tweak. I have much more success that way and am not tossing food (and money) in the trash.
This is a great start. This gives me a starting point. I wouldn't have ever figured out that daikon might be good to try. That's awesome.
So out of the ingredients on the page you've kindly provided, I've come up with this list of ingredients with a couple of my own which is really kewl since it's extremely flexible. I can try any and all, or just one or two ingredients, at any given moment. Great!
When I come up with a recipe, I'll post it here. I have to do that because if I don't make something for a while, I forget how to do it and am back to disastrous results. I've learned to live with it, so what the heck. I'm really good at many things but I can burn water ... <g>
Veggie Chips - Some possible ingredients
Beet rounds (into quite thin rounds)
Bell Peppers strips
Carrot rounds (quite thin)
Cucumber rounds (thick, perhaps 1/4" at least)
Daikon rounds (quite thin)
Onion strips
Potatoes (quite thin) - sparingly, and include no parts that have that bitter-tasting green colour on them
Snow peas
Sweet Potato / Yam rounds (quite thin)
Zucchini rounds (thin?)

- cashews
***********************************
- lemon juice
- granulated onion
- parsely
- dulse and/or kelp in lieu of salt
- black pepper

Perhaps more veggies can be added to this. I'm looking when I go to the grocery store, but am drawing up blanks. But will post anything else if I think of it.
