View Full Version : Basil Chia Seed Dressing

Just made this last night for a salad. Tasty!
1/2 cup chia seeds soaked 4 hours in 3 cups water (less for thicker dressing, more for thinner)
1 cup loose fresh thai basil leaves
1/2 cup loose fresh parsley leaves/stems
1/2 cup loose fresh dill
juice of 1 lime
celtic sea salt to taste
blend all and serve! I added sea palm to the salad and it was delicious!

I just posted another chia seed dressing and realized that I meant to write 3 cups water for this recipe, not 6 cups. I edited the original post.

I'm a little nervous about chia since my failed attempt at pudding. Yech.
What's the texture of the dressing like? I love basil... but I'm worried this might be gelatin-esque (which doesn't appeal to me in a dressing.)

Hi Mallow -
do you have a high-speed blender like a Vita-Mix? If so, it totally obliterates them and you end up with a nice texture. Add more water if you like it thinner....
